A literature review was conducted to identify the important factors that consumers perceive when choosing a food service. The review was carried out in Scopus, Scielo and Web of Science. Price, environment, food quality and location were the attributes most researched by researchers. Consumers perceived that the quality and taste of food were essential for all types of restaurants.
When choosing fast food restaurants, price and speed of service were the most important factors. When selecting other types of restaurants, the most relevant factors were the quality and taste of the food, followed by service-related attributes. Price was shown to be important for the student population, low-income populations, and people who eat out less frequently. With respect to gender, women perceived their families' preferences and food security as more important than men.
Differences were observed in the degree of importance given to selection factors depending on the context of the meal. This review showed that more research is needed, applying precise methods, to understand in general terms the choices of different establishments by consumers.
